The Epica Seasoning Injector Review

The Epica is a 2oz Seasoning Injector made ready for Brisket, pork shoulders, and other large dense cuts of meat. It is made of Stainless Steel so it won't bend or break and it has a 3-ring handle so you can have a secure grip when using. It has silicone gaskets to prevent any leakage of seasonings, giving you the choice of either a liquid or a solid marinade; with one needle (6") having multiple holes for maximum dispersion, or the other needle (also 6") with a large hole in the end that allows solids such as minced herbs, onions, garlic, ect., to pass through without getting stuck. The needles being 6 inches long will help send the flavors deep into the heart of the meat, giving it intense and delicious flavors throughout.

I used the injector in a nice hunk of beef. I like how the injector is heavy duty and seems like a good piece of equipment to have, but once It came down to using it, I was kind of disappointed. The instructions were easy to follow, and once I applied a coat of cooking oil to the inside, the injector cooperated better. But the needle said for sucking up liquid marinades didn't want to work for me. I followed the vacuum sucking directions and the little holes throughout the needle made the liquid not able to suck up well. So I switched to using the other needle, made for thicker marinades, like minced garlic of onion, and it worked much better in sucking up the liquid. I stabbed the hunk of meat and pushed the marinade into it, finding it to be a lot more difficult then I imagined. You have to apply a good amount of force to get that thing in! lol. My husband, who is the chef in our family, feels like, although the metal feels heavy, it seems cheaply made...and that the parts that are made connected to each other, feel loose and clunky, much like they don't fit solidly. He says he wouldn't spend more then $10 on this product. All in all, it's a descent product if you're not looking for top quality. Having a stainless steel injector is always better then plastic ones that get tossed out after one use. And in the end, all that matters is the difference in your meat and how it turns out. Mine turned out great so the injector must have done something good! :) The meat came out perfectly seasoned and tender.

Microwave Snickerdoodles+Recipe

I have been craving chocolate like crazy these past few days and every time I'm at the store, I forget to buy some! So all under 5 minutes, I whipped up some Microwave Snickerdoodle cookies. Now I know these have absolutely no chocolate in them (total bummer) but being that I have no chocolate on hand, something sweet had to substitute that. I remembered a microwave sugar cookie I did awhile back, and remembered how extremely easy it was and thought.. "I already have a baggy of cinnamon sugar mixture from monkey bread a few weeks ago..why don't I try making microwave Snickerdoodles!"
 It couldn't have been easier!
I did the exact recipe (except cut in half  from original recipe, for a 2nd time) from the previous sugar cookies,

3/8'ths Cup of Butter-softened
1/2 Cup of Sugar
1 Eggs-beaten
1/2 tsp of Vanilla Extract
1 1/3 Cups of Flour
1 tsp of Baking Powder
and 1/4 tsp of Salt

 Mix softened butter and sugar together. Then add in vanilla & egg. Then the dry ingredients and mix well! I then rolled the dough balls into the cinnamon sugar mix, placed them on wax paper (a must as it keeps the cookies from burning) and microwaved for 2 minutes and 10 seconds! Came out warm and delicious! Being that it makes a ton of dough, I suggest only making a few at a time since they harden pretty quickly. With the excess dough, I wrapped it in plastic wrap and am keeping it in the refrigerator until next time!

Epica Waterproof Sheet Protector Review

The sheet would also come in handy on those hot Summer nights and not having air conditioning...the sheet will absorb the sweat for a much better sleep. Or if you're potty training, either a child or a pet, this sheet will be a time saver. I decided to keep the Epica sheet on my son's bed (which I placed under his fitted sheet) in case any accidents happen. He's always been really good at making it to the bathroom, but you never know what might happen and it doesn't hurt to be safe! ;)

   This is a great product to have, for whatever the situation may be. It seems like it will last a long time, and save a lot of parents sanity. I know I can definitely see future uses for it, whether that be in my future children's potty training days, or when we finally buckle down and get a puppy ;)

Chicken Stroganoff + Recipe

I made this a long time ago and completely forgot to blog about it! I found the recipe from Bread+Butter for a homemade Chicken Stroganoff. Here it is, copied directly from her site:

Chicken Stroganoff
adapted from Beef Stroganoff from Simply Recipes.

1 large chicken breast
1/2 medium Sweet Onion (diced)
2 Tbsp Extra Virgin Olive Oil
4 Tbsp Butter
1 Tbsp dry oregano
4-5 Tbsp Sour Cream or plain yogurt
2 garlic cloves (minced)
8 oz (2 c) White or Crimini Mushrooms (sliced)
Salt, Pepper, Paprika

"Cut the chicken breast into 1/2-inch strips. Season both sides with salt, pepper and paprika.
Heat the oil and melt 2 Tbsp of the butter in a skillet on a medium flame. 
Cook the chicken slices for 2-3 min on each side.
Remove from the skillet and let it rest for 2-3 min, covered loosely with foil. 
In the same skillet, melt the other 2 Tbsp butter. Then saute garlic and onions until tender. Add in the mushroom and cook until they are slightly darker in color. 
Stir constantly. Season with a little salt and pepper.
Then add in the sour cream. Combine thoroughly. 
Feel free to add in more, if needed. It should look like a thick sauce.
Pour over or mix in your favorite pasta."

The Chicken Stroganoff turned out way better looking, over at Bread+Wine 
but it was still a nice dinner to sit down to! :)

Kroger's Deli Fried Chicken BzzAgent Campaign Review

As a BzzAgent, I was able to try out the Kroger Family stores, Deli Fried Chicken, as well as their brand name Kettle chips, and a Coca Cola drink product. I used my freebie coupons at our local Fred Meyer, finding the chicken right up front by the deli, with the drinks beside it for easy pickup! I had to hunt down the Kettle chips though...in the chip isle! I ended up grabbing the Lay's kettle chips, not realizing they weren't the Fred Meyer brand-which was what the coupon covered-so I purchased the Lays, then found Fred Meyer brand chips and used my coupon on those. Came home with two bags of chips, same flavor, different brands...So I decided to do a comparing review on those, which you can find HERE :)

     It was nice not having to cook dinner for the night! The deli chicken was already warm and smelt good, just like fried chicken, but it was a bit greasy and seemed like it had sat for awhile since it had been cooked. It was really juicy but lacked crispiness and flavor in the larger chicken pieces. The smaller pieces, like a drumstick or wing, had much better flavor, which my husband (who is from the South lol) said they tasted better then KFC but not as good as Popeye's (or home made of course). But 8 pieces of chicken for only $6.99 is a great deal,
especially if you're needing a quick dinner with enough food to feed your family!

The Fred Meyer brand Kettle chips we picked, were the mesquite barbecue flavor, which were really crunchy, with several of them being folded. I like my chips folded, it makes them more fun to eat, and usually taste better, but with them being so crunchy to begin with, it made for some loud chip eating lol. With our food, we got a 1.25L bottle of Coca Cola. We aren't much of a soda drinker family, but having a Coke Float made a fun drink for me. My husband use to drink Coke growing up and he said comparing to the Coke then and the Coke now, it seemed sweeter and more carbonated. But that could just be because we don't drink soda very often and our taste buds aren't use to it ;) I did find that if you mix Coke with French Vanilla ice cream, it tastes a bit like cheesecake! So that was pretty cool :)

   Kroger Deli's carry, not only fried chicken, but also Rotisserie and baked chicken, which is always taken from the best quality, being fresh, and never frozen. They offer their chicken to be hot and ready for purchase between 11 A.M. and 7 P.M. and if it isn't..it's Free! Kroger also has a Meal Bundle for $12.99, which contains an 8 piece pack of deli fried chicken, two hot side's and a 4-pack of King's Hawaiian Dinner rolls or biscuits. Another great deal for families on the go. And it's cheaper then KFC! You can also contact your local Kroger Co. Family of stores to host your parties, picnics, potlucks and more!

Comparing Two Like Chips

I was at Fred Meyer the other day, purchasing my BzzKit goodies, and once we got to the checkout, I realized I had the wrong brand of chips! I grabbed the Lay's instead of the Kroger Co. Brand the coupon called for! So we went ahead and purchased the bag of Lay's and I went back and found Fred Meyer chips to use the coupon on. Going home with two bags of chips, both kettle, and both mesquite barbecue, I had the bright idea to compare and review the two!

 The Lay's came out with more flavor and seasoning, but they were really thick and so much crunchier then Fred Meyer brand chips, which were really crunchy as well.

The Fred Meyer Brand had less flavor and crunchiness, but a lot of the chips were folded over. I like folded chips but when these ones were already crunchy, the folded ones made them doubly crunchy and super loud to chew. lol.


They both basically contain the same ingredients and nutrition value, making them almost the exact chip, just in different packages. But because one chip has a different texture then the other, it must be due to the anti-caking agent, silicon dioxide? lol I have no idea but in the end I -surprisingly- found the Kroger brand to be better! But only because the Lay's was just way too crunchy.

Berenstain Bears DVD/Plush Doll Set Review

I received the Berenstain Bears: Golden Brother Edition and Golden Sister Edition gift sets from childsplay communication in exchange for my review. 


   Each gift set include a 10 inch Brother or Sister Bear Plush stuffed animal and the limited edition DVD. They have become available for purchase, as of May 21, 2013, exclusively at Walmart and Sam's club stores.
 
 

   The Berenstain Bears Golden Brother Edition gift set is about Brother bear, with his love of sports, soccer, and his brave personality to stand up for the smaller cubs in his school. He is viewed as a protector and strong and loyal friend. The Berenstain Bears Golden Sister Edition gift set is about Sister Bear, as a young third grader who loves fairy tales, writing and jump rope, as well as being in the outdoors and enjoying sports.     I enjoyed both of these films, as The Berenstain Bears were something I watched as a kid, and can now share it with my children. I love how the Bear family works together and are always there for one another, including being there for neighbors and friends. Each episode is filled with a lesson to teach, based on good morals and positive influence. The Brother and Sister Bear stuffed animals are super soft and cuddly, with their bottoms filled with beans for extra weight and support. I love their soft texture and facial expressions, as well as Sisters pink bow.

   I think these would be a great gift idea for twin brother and sister sets, or brother and sisters that share the same birthdays. It would also make a sweet collectors item for Bear lovers.

Mini Corn Dog Muffins + Recipe

I came across this recipe several times, for the mini corn dog muffins, and today I made them for our lunch! I used Iowa Girl Eats recipe, and it was really simple to make!


You begin by making the cornbread batter (copied from Iowa Girl)

Ingredients:
1/2 cup melted butter (or 1/4 cup butter + 1/4 cup unsweetened applesauce)
1/2 cup sugar
2 eggs
1 cup buttermilk
1/2 teaspoon baking soda
1 cup cornmeal
1 cup all purpose flour
1/2 teaspoon salt
8-10 all-beef hot dogs, cut into 1″ bites
Directions:
  1. Preheat oven to 375 degrees. Combine butter and sugar in a bowl, and whisk to combine. Add eggs and whisk to incorporate. Add buttermilk and whisk to incorporate.
  2. In a separate bowl, combine baking soda, cornmeal, flour, and salt, and stir to combine. Whisk into wet ingredients in two batches.
  3. Spray a mini muffin tin with non-stick spray, and spoon 1 Tablespoon of batter into each mini muffin cup. Place one hot dog bite into the middle of each cup.
  4. Bake for 8-12 minutes (oven temperatures vary), or until cornbread is golden brown. Cool in mini muffin tin for 5 minutes before serving. Store leftovers in the refrigerator, and re-heat for 20-30 seconds before serving.
 See? Super easy. And super delicious!
