Volcano Cookies

I call these volcano cookies because the tops look like volcanoes! 


I made the cookie dough with this recipe:

3/4 c granulated sugar
3/4c packed brown sugar
1c butter, softened
1 egg
21/4c flour
1tsp baking soda
1/2 tsp salt

Mixed it all together, rolled it into some plastic wrap and let it sit in the fridge over night.

The next day I cute the roll into slices and rolled them into balls, 
flattened em and placed a milky way candy bar atop it.
Baked in the oven at 375 degrees until they were golden.



The caramel in the Milky Way candy bars made the middle of the cookie chewier 
than I like so I just made the rest candy bar-less. :)

Chocolates From Hawaii

My hubby had a friend who went to Hawaii over the Summer and he had Chocolates brought back for me!! Cute Hello Kitty, Chocolate covered Macadamia nut candies.

I got this at Michael's for only 79 cents! They're having a lot of things on sale right now, I'm lucky I didn't get myself into trouble and buy it all lol.


Chocolate Zucchini Cake

Cake is delicious...and adding in Zucchini?? How smart!


I fell in love with Aunt Shanny's Chocolate Zucchini Cake recipe, (which you can check out her's HERE) So I wanted to give it a shot!! Except....I gave it a little twist. Not because I wanted to, but because I didn't have some of the ingredients called for, on hand, so I had to improvise. We're in the process of moving in the next week or so hopefully, so groceries are mellowing out for an easier move...

Yes, I could have made this cake when I had the specific ingredients, But the impatient person I am, I wanted to do it today :) And seeing that it's been a relaxed overcast day, it was the perfect time to!

(Below is the recipe & I wrote in parenthesis my improvisations)
  
1 cup brown sugar
1/2 c. sugar
1/2 c. butter, softened
1/2 cup vegetable oil
3 eggs (I used applesauce instead)
2 t. vanilla
1/2 c. buttermilk (I used milk mixed with lemon juice in place of)
1 t. dried orange peel (omitted-didn't use anything in place of this)
2 1/2 c. flour
1/2 c. cocoa
2 t. baking soda
1 t. cinnamon
1/2 t. salt
2 c. grated zucchini
(optional) 1 c. chopped walnuts


*The Chocolate Glaze for the cake called for:
1-2 c. powdered sugar
2 T cocoa
3 T. milk
1 t. vanilla

I mixed all the glaze ingredients together and found that I wasn't fond of the taste! A little too powdered sugary for me. So I added in about 1/2c of butter and about 4oz of whipped cream cheese. Mixed it all together and drizzled it onto the cake. Then topped it all with some shaved chocolate. Came out tasting good! BUT...I found that chocolate and cream cheese flavor doesn't mix too well.

The cake is DELICIOUS!!! But I wish I left out the cream cheese in the glaze :)

I LOVE the cake by itself though. It taste very similar to brownies. 
And I actually wish I didn't put ANY frosting on :)

So THANK YOU Aunt Shanny for this wonderful recipe! One I will keep in my book.

Carrot Cake

I made a Yummy carrot cake along with a cream cheese frosting and topped with walnuts!!

I followed the recipe on Joyofbaking.com and it calls for:

1 cup (100 grams) pecans or walnuts

3/4 pound (340 grams) raw carrots (about 2 1/2 cups finely grated)

2 cups (260 grams) all-purpose flour

1 teaspoon baking soda

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1 1/2 teaspoons ground cinnamon

4 large eggs

1 1/2 cups (300 grams) granulated white sugar

1 cup (240 ml) safflower, vegetable or canola oil (or other flavorless oil)

2 teaspoons pure vanilla extract

And topped it with a yummy cream cheese frosting and walnuts.














Cream Cheese Frosting:

1/4 cup (57 grams) unsalted butter, room temperature

8 ounces (227 grams) cream cheese, room temperature

2 cups (230 grams) confectioners (powdered or icing) sugar, sifted

1 teaspoon (4 grams) pure vanilla extract

1 teaspoon finely grated lemon zest (outer yellow skin) (optional)

(Just a tip: I halfened the recipes to make this size of cake though)



Delicious.

Finding New Products: Nusco + Apple Milk Tea

 
   Something you will learn about me, is I love trying new foods!! So when I come across something that seems interesting to try, most times I will get it. So upon my recent shop at the Asian Food Market, I found a similar version of the product, Nutella, but called Nusco. Nusco is made in and shipped from Holland. and has two flavors, Hazelnut Duo and Hazelnut chocolate.  I picked up the container of Hazelnut Duo to try, which is hazelnut chocolate mixed with vanilla swirls. This stuff is delicious and tastes great on bread!
 

Another product I got is Apple Milk Tea. This drink is made in and shipped from Japan. A milk tea with apple flavoring and it is so yummy! My new favorite drink!!

A Full Tomato Dinner

My grandpa gave me a lot of tomatoes and I had no idea what to do with the ones I wasn't eating...
so I decided to make tomato bread sticks!

I started out with 8 tomatoes. I sliced an "X" in each tomato for better peeling once boiled.













Boiled them til the skins start looking peelable. 
Once skins look peelable, dump all into drainer, rinse with cold water (or put in bowl of ice water)












Once cooled off, peel skins off and place into blender. 
Add in some garlic salt and black pepper and mix

 Pour a small amount into breadstick batter-in place of called for liquid. 
And save the rest in a freezer bag!














Breads stick dough ball ready to be rolled and made into bread sticks!



Bread sticks done and sided with homemade pizza and tomato slices.

And this was my great idea to hold the freezer bag upright in the freezer so the tomato sauce could freeze all in a straight area so folding made it easier for storing it in freezer! Using my bag clip I got from Fresh Express Salad, to hold my bag in place on the freezer door!

Cute box of Honey Nut Cheerios, which I just ate today and they are yummy as usual:



















Suave Products from Walmart. Men's Body Wash which smells sooo good! I gave it to my hubby and he comes out of the shower smelling so clean and fresh :) I love it. Sweet pea lotion which is sweet smelling and a great size for my bag. And Dry shampoo spray. It smells good but it makes my hair feel odd and look kind of dusty.



















And Teachers Tape. Great for sticking things on walls and not leaving a mess behind!



















I Love receiving samples :) As I always say, it's like Christmas in the mail!
